when i see the Tasty videos, i can’t help but feel confident – i can do it! such was the feeling when I saw the video for eggplant hasselback. now i am no fan of eggplant but i love caprese. it also looked so easy and beautiful that it kinda called out for me to make it. SO WORTH IT!

this is a fun cooking activity to do with kids – from mixing to scooping to folding – making zucchini ravioli together! it’s a perfect recipe for my gluten free child and healthier than eating pasta. yum!
i looked at several recipes to make this. the first time i tried this recipe i used a spiralizer to create the zucchini strips but the strips were too thick so little one and i had a hard time folding the zucchini ravioli. this time, i used the vegetable peeler to slice the zucchini and it was just right! i was thinking of making cheesecake for Father’s Day since I knew k could eat cream cheese but i didn’t find a recipe i could be sure of yet and i didn’t have time to experiment with any recipes. but i found a great alternative! i had made gluten free vegan chocolate cake but had not come up with a topping yet. so how about cream cheese frosting?
i found a few recipes i was interested in trying but this one was great because it was a no-cook recipe and had lots of flavor option ideas! i used whipped cream cheese so it may have made the consistency softer and i wasn’t able to pipe a swirly top above the cupcake. but it tasted good with the chocolate cake. i’ll be sure to try it again as well as try the other flavors.

to introduce k to beef, i started with ground beef. to make it an easy cooking experience, i bought ground beef patties and made little burgers. since k can have a little fat, i bought the 85% lean, 15% fat patties. then i just put them on the frying pan – no oil needed – and let it cook until well done. remaining oil from the meat i used to cook the veggies. potato is a staple for Thanksgiving and mashed potato is a family favorite. we haven’t introduced k to butter yet and k can’t have garlic so i had to alter the recipe. i remembered k’s daycare cooking class potato pancake day, i made cheesy potato pancake, so i made cheesy mashed potato! –> recipe on Palatable Palette i received the greatest compliment from the teacher at the end of the day: “what did you add to the mashed potatoes? the kids couldn’t get enough and were so upset when it was finished!“ Continue reading cheesy mashed potato
k’s daycare’s second cooking class / my cooking assignment was potato pancake. the teacher told me there would be eggs in the recipe and when i looked online for potato pancake recipes, i saw quite a variety of recipes, most included eggs, some uses grated potato while others used mashed potatoes, some is flavored with onions and garlic while others are flavored with cheese. k’s daycare wanted to celebrate the day by asking all of the kids bring a sandwich to school. so a few days earlier, i had k try the brown rice loaf i found in the supermarket and luckily she didn’t have any problems with it.
so for k’s sandwich on this fun “holiday”, the easiest sandwich in the book: grilled cheese!
