it’s sugar cookie day again at k’s daycare so why not try another recipe? this is called a chewy butter cookie but it’s very similar to the ingredients of other sugar cookies i’ve tried so i decided to give it a shot. the recipe called for a lot of sugar – both white and brown so i reduced the sugar and only went with brown.
the cookies were the perfect level sweet (yikes – imagine if i put in the original amount!) and not too chewy (which is good for a cookie). i think this will be my go-to sugar cookie recipe from now on!

the first food that k showed me lack of interest in was chickpeas – feeding them to me instead of eating it. so when i found these chips in the supermarket, it seemed like a fun way for k to retry chickpeas. i know k can eat chickpeas without an allergic reaction. there are also a few new spices to introduce k to so i picked it up.
k’s cooking class is making chocolate muffins again. honestly i haven’t made any chocolate muffins since then but i did know if i did, i would try a different recipe. so here’s my opportunity of a do-over. i chose this recipe because it doesn’t have sugar as an ingredient, instead it uses fruits: dates and banana. i didn’t have any dates and i think they are a bit too sweet, so i added apples instead. the recipe also used “nutty” ingredients, i.e. almond milk and peanut butter. k is allergic to nuts so i used cow milk and butter. finally i found a baking flour that claims it can be substituted for any baking flour, so i used it instead of wheat flour. we were out and about when i realized i forgot k’s snack! so we went to the deli and looked for something that she could eat. it has three main ingredients: popcorn, vegetable oil and sea salt. k liked it very much!
from the same brand that brought k her love of waffles, is Van’s Gluten Free Multigrain Crackers. it has a crispy texture and nice flavor. like most snacks it is a little saltier than i would like for myself and even more so to give to a toddler so i lightly wipe off the top and bottom of each cracker to remove some of the salt and then it’s perfect!
the Ener-G brand pretzels are a bit crunchy so i haven’t bought them again although i did give k some from the last batch. when i was grocery shopping the other day at a local supermarket, i saw a line of gluten free products: Glutino. I’ve seen the name before but hadn’t tried it before. so when i saw they had a line of pretzels
k’s daycare made sugar cookies for the holidays but i didn’t love the recipe i made so i wanted to try another. while i was grocery shopping the other day, i found a gluten free baking flour from Bob’s Red Mill. that says you can just substitute it for any wheat flour! that should mean that i don’t have to look for gluten free recipes – so i went online and found this eggless sugar cookie recipe *see note 1.
since this recipe didn’t “allow” for using a cookie cutter to shape, so instead of flattening it with a glass i let the cookies bake for 5 to 10 minutes first. then i removed it from the oven and used a cookie cutter to cut the shape and sprinkle sugar and/or cinnamon. i put it back in the oven for another 5 to 10 minutes. prices of foods at natural foods stores are not cheap but the one near me would often have sales. so whenever there was a sale, i would look at the items and if k can eat it, i would give it a try. that’s how i found Benitos.
i love pretzels and thought k may enjoy some to. i was excited to find these Ener-G brand pretzels that were not only wheat free and gluten free but also dairy, egg, nut and soy free. not only does it satisfy k’s allergy needs but also kids with more allergies than k.
the first few “birthdays” parties we had for k – her 1 month and her 1 year – were in some ways more parties for us than for her. it was mostly m & my friends and the food was mostly adult food. since she was so young, it may not have made much of a difference to her.
now that she’s more aware of her surroundings and in school and partaking in her own friends and atmosphere, participating in friends, classmates and her own birthday parties will be a part of life. Continue reading “celebrating birthdays gluten free and vegan … with cake!”
i actually first found this brand chips in my local supermarket for a friend of mine – she loves her sriracha hot sauce and this brand had these sriracha flavored chips so i bought them for her and her daughter for fun. i didn’t think twice about giving it to k since she wasn’t going to be ready for spicy foods anytime soon (since her adverse reaction to garlic). for the holidays k’s school is making sugar cookies. so i found this sugar cookie recipe and pared it down for k’s allergies – which made it just 2 main ingredients and a few flavoring ingredients (vanilla and salt). the only cookie cutters we owned were star wars cutters that m got as a gift. so for the trial run, i made star wars apple “sugar” cookies.
m enjoyed the star wars cookies but i didn’t love the first recipe so i looked for another. this one had a few other ingredients, including egg, butter and milk. since k can’t eat eggs, i substituted it flax meal with water. i also used a vegan spread instead of butter. m liked the flavor of this milk “sugar” cookie better than the first. there’s a local natural foods store that i’ve been dependent on recently that i purposely roam through the aisles to see if i can find anything that k can eat. as i have been searching for dry snacks for k’s daycare snack time, i found these: Real Foods’ Corn Thins. since it’s a processed food, i have to depend on the labels and according to its packaging, it is made from all natural ingredients, gluten free and non GMO.
