my little one has had an abundance of wonderful hand-me-down clothes, books and toys. one of baby’s favorite toys been the musical tea-for-two set. the tea pot sings a few melodic songs and makes a sound when you pour. it’s quite cute! so this morning’s breakfast is dedicated to tea for two or three or four … with a little cake of course!

yesterday was the annual Star Wars Reads Day. in a local event, this year’s event focused on the retelling of the original trilogy. authors Alexandra Bracken, Adam Gidwiz and Tom Angleberger talked about the books they wrote and then allowed the audience to play Star Wars trivia as well as get quizzed by the fans! so this morning’s breakfast was dedicated to them!

Sunday morning recipe: gluten free vegan blueberry muffins

this week’s Sunday breakfast, i thought i’d try a muffin. blueberry muffins are popular for breakfast and i found this recipe that looked good and simple to make. as usual, i substituted flax meal instead of eggs to make it vegan. there is a lot of butter and sugar in the recipe. for butter i used a vegan spread and for the sugar, i tried two versions:

  1. for one half dozen, i substituted sugar with applesauce. there was no sugar in this version so the muffins were very soft and it really relied on the fruit to sweeten the muffin. it worked well and k enjoyed it. an option to make it a little sweeter is to use mashed bananas.
  2. for the other half dozen, i used brown sugar so i could taste the recipe in its original form. i meant to use only half of the amount of sugar but ended up using 2/3rds the amount of sugar. it was still too sweet! next time i’ll remember to only use half the amount.

recipe: gluten free vegan cinnamon apple crêpes

when i watched a gf make crêpes for brunch a few months ago, she showed me how simple it was. so when i saw a picture of these cinnamon apple crepes online, i decided to give it try it for our Sunday breakfast. the recipe i found required gluten free and gum free pancake mix or flour, which i didn’t have but i tried the recipe anyway.

well, let’s just say i ended up with big, thin pancakes – but they were tasty with the cinnamon apple filling so it’s all good. when i have the right flour, i’ll try it again to see if i come up with thin quality crepes. if not, they were a fun variation to Sunday morning pancakes! after enjoying the happy pancakes with k, i was excited to try other alternatives. i found this biscuit battered fruit rings recipe *see note 2 because it sounded fun! apple wrapped in pancake – how awesome is that? the process looked like it would be fun to watch so i had k join me in the kitchen while i dipped the apple into the pancake batter and then cook – she enjoyed seeing the process and more importantly she had a great time eating them! processed breakfast food: Van’s gluten free flax waffle

bkfst Van's Foods waffles k’s daycare cooking class was going to have waffles so i had to either find or make waffles that k could eat in class. easiest would be to find one that was gluten free vegan and with concerns of k’s allergies, they also had to be made of ingredients that k has already been introduced to.

luckily there was one in our local store that we could try: Van’s gluten free flax waffles. it has no artificial flavors, colors or preservatives. it is sweetened with fruit juices instead of high fructose corn syrup. in addition, it is gluten free, egg free and non GMO Project verified. processed gluten free vegan cereal: Nature’s Path Organic Whole O’s Cereal

at k’s daycare, she is the same age as a few other toddlers in the class and the teachers decided since they all started walking, to have them begin potty training. with potty training, they will give them a treat. Nature's Path Organic Whole O's  Cereali have read some give candy but at school they plan to give Cheerios. since Cheerios has wheat and eggs, i needed to find a gluten free vegan alternative.

luckily in my local natural foods store there’s a Nature’s Path Organic brand that has gluten free vegan cereal in the shape of O’s just like Cheerios. they have a nice flavor but are a little crunchier. luckily k has all of her front teeth and her molars have started growing so she can handle some crunch. k’s daycare wanted to celebrate International Sandwich Day which is on Monday, November 3rd this year. i haven’t introduced k to bread yet since it’s mostly made with wheat flour and egg – both of which are no-no’s in k’s diet.

Ener-G Brown Rice Loafbefore i considered looking for a recipe to make bread nor do i own a bread baking machine — although a friend got one for her wedding years ago and i did think they were really cool – i went shopping at my local natural foods store. luckily i was able to find Ener-G Foods’ Brown Rice Loaf. i like that it was free of gluten, wheat, casein, dairy, egg, soy, nut, low/no sodium. in addition it was non GMO Project Verified.
