to celebrate St. Patrick’s Day, i thought i would try a traditional dish that is easy to make and flavorful: corned beef with cabbage. Trader Joe’s makes it especially easy to make this meal! they sell Uncured Sliced Corned Beef that is minimally processed and Shredded White Cabbage. it is perfect for the little one – with the corned beef already thinly sliced and the cabbage shredded, i needed to do little but boil everything.. to introduce k to beef, i started with ground beef. to make it an easy cooking experience, i bought ground beef patties and made little burgers. since k can have a little fat, i bought the 85% lean, 15% fat patties. then i just put them on the frying pan – no oil needed – and let it cook until well done. remaining oil from the meat i used to cook the veggies. the next country on k’s daycare schedule is China. the teacher asked for my help. years ago i taught elementary grade kids to make dumplings and i thought of simpler steps for k’s class of toddlers to make them but my greatest challenge was k’s wheat allergy. i tried for several weeks to make gluten free dumping wrappers to no avail. they kept falling apart – too fragile for toddler hands.

at k’s daycare, she is the same age as a few other toddlers in the class and the teachers decided since they all started walking, to have them begin potty training. with potty training, they will give them a treat. i have read some give candy but at school they plan to give Cheerios. since Cheerios has wheat and eggs, i needed to find a gluten free vegan alternative.

the results of k’s second food allergy test, shows that her food allergies will continue to be a concern. our allergist had suggested that we would clear our house of things that she’s allergic to in hopes that her reaction to them will lessen and then perhaps she will grow out of the allergy.
i do enjoy prepping k’s food so that part is not a burden. other families with children k’s age have been able to share meals with their toddlers and i was looking forward to making meals that we could all eat together but it seems like making separate meals will be a longer term process to make sure her meals aren’t contaminated with anything she is / could be allergic to. a girlfriend and fellow mom of a toddler starting solids mentioned they introduced her to lentil so i was excited to have C try it too! i tried SHILOH brad lentil and picked brown lentils because it has the more iron than the other colors (red or green).
preparation is relatively easy – wash and boil for 30 minutes until soft. sometimes it took a little longer to cook because they weren’t soft enough but it required little attention. i always make an adult serving and save the remainder a storage container.
i started k on lentil, sometimes with savory fruits and vegetables and other times with sweet. either way k took to it pretty well! i’m glad k has a healthy tastebud!
