recipe: eggless gluten free pumpkin scones

i love pumpkin scones so i thought it would be a nice dessert for Thanksgiving dinner. it was pretty simple to make and yum yum yum! i lost track of time so didn’t get to make it with little one but it is something i plan to make again soon so i look forward to working with her on this dessert.

i love that it wasn’t too sweet – probably because the recipe included a glaze. it would be perfect sweetness for me but for this Thanksgiving dinner, it is a great pair to the chocolate mousse.

ingredients

  • 2 cups gluten free flour blend
  • ¼ cup cane sugar
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon sea salt
  • ¼ cup butter•
  • ½ cup pure pumpkin puree
  • ½ cup skim organic milk
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon pure vanilla extract

preparation

preheat oven to 400 degrees. prepare baking sheet by lining with parchment paper. set aside.

in large mixing bowl, whisk together flour, sugar, pumpkin pie spice, cinnamon, baking powder, baking soda and salt. using pastry cutter, cut in butter until small pieces remain.

mix together pumpkin puree, milk, vinegar and vanilla in separate bowl. pour over flour mixture. gently blend until dough just comes together.

place dough on large piece of plastic wrap or parchment paper dusted with gluten free flour blend. gently pat into 9-inch circle, about 1 inch thick. using a pizza cutter slice into desired pieces. shape to triangles.

carefully place scones on prepared baking pan. bake 18-22 minutes, until golden brown. remove from oven and cool slightly on cooling rack.

• food substitute tip
original recipe called for shortening. for many recipes, you can substitute with butter because it behaves much the same as shortening. it gives baked goods a rich, buttery flavor. we sacrifice flakiness for a superior creamy mouthfeel. unlike lard or shortening, butter contains a little liquid, so remember to decrease the liquid in the recipe slightly if you’re using it a substitute.
