daycare cooking assignment: potato pancake

k’s daycare’s second cooking class / my cooking assignment was potato pancake. the teacher told me there would be eggs in the recipe and when i looked online for potato pancake recipes, i saw quite a variety of recipes, most included eggs, some uses grated potato while others used mashed potatoes, some is flavored with onions and garlic while others are flavored with cheese.

the importance of egg was an obstacle since it binds the potato together to a shape of a pancake. the perfect solution was cheese since i knew k can handle cheese. i decided to try both grated potato and mashed potato to see which one would hold together better and if one tasted better than the other: (1) cheesy mashed potato pancake and (2) cheesy potato pancake.

  • 1 cup leftover mashed potato
  • 1 slice organic cheddar cheese
  • ¼ cup milk (of your choice)
  • 1 Tbsp quinoa flour

preparation

  1. take out leftover mashed potato and allow to cool.
  2. in a small saucepan, heat milk and add cheddar cheese until cheese has melted.
  3. mix mashed potato with cheese mixture.
  4. make sure mixture is not hot. then mold into the shape of a pancake. lightly coat with quinoa flour.
  5. heat stainless steel frying pan. place pancakes on frying pan and heat until lightly crispy.
  6. allow time to cool then serve.

both potato pancakes worked out great! i will definitely be making it again.
