introducing new foods: carrots

carrots are also a favorite for new eaters because of it’s sweetness and as expected k loved it. carrots do have to be cooked longer so that it is very soft – if you don’t make it soft enough and grind it, little pieces can get stuck in baby’s little throat and cause him/her to choke.carrots

ingredients

  • 1 carrot, organic if possible *see
    note 1
  • 1/2 to 1 oz liquid, as needed:
    – leftover saved juice
    – or – water

preparation

  1. chop up fresh carrots into medium size chunks then boil them in the small saucepan *see note 2
  2. let boiled soft carrots cool and then grind in food processor.
  3. save shredded carrots in a small food storage container. *see note 3

1. EWG produces an annual list of the “dirty dozen“, i.e. the fruits and vegetables that are recommended to buy organic due to pesticide residue. carrots is also outside the top 12 but is on the “dirty” part of the list so when possible, it would be safe to buy organic. here’s the whole list: EWG’s Shopper’s Guide to Pesticides in Produce

2. tip: carrot juice can not be reused due to nitrates that may have seeped into the cooking water.

3. storage: i’ve noticed that carrots doesn’t store in a food storage container for a long time in the refrigerator so i only make 1 or 2 medium carrots at a time. however it is a vegetable that freezes well so if you want to make in a large quantity, you can.
